Herbes de Provence

In the south of France the ubiquitous seasoning blend herbes de Provence is sprinkled on everything from rotisserie chicken to pizza. The aromatic mélange typically includes rosemary, thyme, basil, marjoram, savory, and lavender. Fortunately, you don't have to mix your own herbs; the blend can be found prepackaged in gourmet shops and supermarkets. Read the list of ingredients to make sure they look authentic; many so-called herbes de Provence sold in this country do not resemble the blends from France at all and include dried orange or lemon zest and garlic or onion. I usually make my own spice and herb blends, but this is the only one I always buy.
